Pizza Night

One of my only complaints about Colorado is its lack of decent pizza. Back in MN, I might actually choose Dudley's supreme pizza as my last supper, if given the choice. After eight months of mediocre pizza, Erik and I decided to make our own (everything but the crust). It turned out surpisingly well, and we now have a go-to sauce recipe which I will gladly share with you all...

'Garlic Lover's Pizza Sauce'

Ingredients:
3 tbs olive oil
1 medium onion, minced
1/2 green pepper, minced
4 large cloves of garlic, minced
1 1/2 cups water
6 oz can of tomato paste (be sure to read the label to make sure that the only ingredient is tomatoes to avoid excess sugar or sodium)
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsely
salt and pepper to taste (I used garlic salt... we're big garlic people)

Directions:
Heat oil in a large skillet. Add the onion and green pepper, cook and stir for five minutes. Add garlic and saute for a minute or two. Add the water and stir in tomato paste. Add basil, oregeno, and parsely. Stir. Lower the heat and simmer for about five minutes. Add salt and pepper to taste (you can also add extra spices or hot sauce for a kick, if you wish). Let simmer, stirring occasionally for about 15-20 minutes until the sauce thickens up.
This makes enough sauce for about two 12-14" pizzas. We only made one pizza and are using the leftover sauce for pasta.

The best pizza we've had in CO thus far, AND our first fresh pineapple of the year!
