Braised Balsamic Chicken

I thought I would share one of my recent go-to recipes. I found it on allrecipes.com and absolutely love it served over quinoa. Enjoy!

Ingredients:

- boneless chicken breasts (6) or tenders (10-ish)
- ground black pepper to taste
- 1 teaspoon garlic salt
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 1/2 cup balsamic vinegar (sometimes I use a little less and add a little bit of chicken broth to make up for it)
- 1 can diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregeno
- 1 tsp dried rosemary
- 1/2 tsp dried thyme

Directions:

1. Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts. (This is also about when I start cooking quinoa in my rice cooker)

2. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregeno, rosemary, and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.

Serve over rice, pasta, quinoa or some other grain of your choice :)
